Sweet wine with aromas of apricot, honey, candied fruit and mango. On the palate, this complexity of flavors is supported by a refreshing acidity and a nice balance, with notes of imposing fruit.

Production method

Exceptional wine made from overripe grapes from the winter harvest picked between -8°C and -12°C, which promotes the desiccation of the berries and a must that is both richer and more concentrated. When 100 kg of grapes normally yields 70 to 75 L of must, this volume is only 12 to 15 L for our precious Icewine.

Pairings

As an aperitif or with foie gras canapes, crepes with goat cheese and peach jam, fruit garden, strawberry and rhubarb tart or apple tart.

While most grapes around the world are picked during summer weather conditions, this grape is picked not only in the snow, but with extreme temperatures approaching -12C. What a great challenge for winegrowers from the south of France!
